Sweet Sundays: Chocolate Chip Cookie Ice Cream Sandwiches

My most absolute favorite treat from the ice cream truck is a chocolate chip cookie ice cream sandwich. Did you know those bad boys have like 500 calories a pop? Not to mention they are like $5.00 a pop too! Ugh... I don't get them very often. But, when I do it's totally worth it! Well this week I set out to make my own chocolate chip cookie ice cream sandwiches since the ice cream truck has not been coming around nearly as much as we would like.

I know this isn't rocket science, but it is fun, yummy and the kids can definitely help. A more glamorous version of me would make the chocolate chip cookies from scratch but I was up for more instant gratification so we went with the ready bake kind. We embellished a little too from the originals. Sprinkles were a must! We found these JUMBO tollhouse cookies which were the perfect size to replicate our my favorite ice cream sandwiches but if you wanted a smaller (less caloric) kid friendly version, the standard size cookies would be perfect. You are, of course also going to need a little vanilla ice cream.
Bake the cookies accordingly and let them cool. Then, let the fun begin. Grab the kids, break out the ice cream and sandwich a scoop between two cookies. When you put the sandwich together press the top down so the ice cream starts to squish towards the sides.
Now you could leave it just like this. Perfectly yummy. Hubby actually prefers his this way. But...why stop there. Roll the sandwich in sprinkles. Or spoon them on, whatever works. Mr A loved this part!
